Our varied livestock at Climbing Tree Farm allows us to produce several different kinds of meat, including pork, chicken, and lamb.  Available to purchase in various ways either wholesale and direct, through CSA,  or from our butcher and restaurant partners.

We raise mixed breed heritage pigs, with a focus on rare breeds (Red Wattle, Large Black, Berkshire) that forage exceptionally well. Our pigs forage year round on field and forest. We feed our pigs a healthy, varied diet. We milk-feed our pigs local, grass-fed Jersey milk and cream. This gives our pork its distinctive creamy flavor, fine marbling, and dense, delicious fat. We graze rotationally, which rejuvenates our land, rather than degrading it, simultaneously providing the (naturally curious) pigs new things to explore and the highest quality forage possible. We estimate that woodland forage makes up about 30-90% of the pigs’ diet (depending upon the time of year). We loosely follow Italian dairy-fed, and Spanish hog raising methods which emphasize woodland forage and acorns as a primary feed source.

Our pork is available through the Lebanon Valley Cooperative Meat CSA, and wholesale to businesses and individuals.  A list of restaurants and butcher shops where you can find our pork is available on this site.

Note to wholesale customers: We sell whole animals in a variety of sizes, from suckling pigs up to charcuterie hogs. We raise, various breeds and can recommend a breed/individual pig to meet the needs of your project. We have regular transport to NYC for wholesale delivery. Please contact us for pricing and availability.

We raise Cornish/Rock cross broiler chickens on rotational pasture and locally-grown grain. Our birds are extremely flavorful, tender, nutritionally superior, and a comparable product cannot be bought in a store. Our chicks are locally hatched. They begin living outside and eating grass as soon as the weather is suitable (chicks are usually on pasture at 2-3 weeks). In just one year, without the use of machinery of any kind, we were able to turn seven acres of scrub land into beautiful pasture by intensively grazing it with chickens and sheep. Our chickens range in size from3-6 lbs. Our birds are processed in a mobile NY State Certified facility on our farm, where they are well cared for at slaughter. Our poultry live on and eat from the field- they are not generally available during the winter.

We raise Emden and Toulouse geese on rotational pasture. Geese available by pre-order only in the 2017 season.

Note to wholesale customers: Our poultry is grown in small batches. Please contact us well ahead of when you would like to purchase poultry, so that we can amend our production schedule to accommodate your needs. Ask us about our rare, specialty birds.

Sheep were our first animals on the farm. Our flock is on rotational pasture year round. Our lamb is lean, with a mild, delicate flavor, tender, and packed full of vitamins and minerals. Our lamb is slaughtered, butchered and packaged by two local, USDA facilities, where we feel certain they are handled with dignity and care. We often have soft, beautiful lambskins available. They are machine washable and can be used as rugs, in babies’ beds, on chairs and car seats, you name it. Blankets woven from our wool are available in the fall and winter.
